Maria Stewart...Shrimp Feta Scampi

Do you want to feel so good about your culinary prowlness that you might even ponder applying to compete to become the next Top Chef?
Do you want to leave your hunny speaking in tongues because of the delectable food they have just ingested?
Do you want to do this all in less than 45 minutes and be amazed how something so yummy can be so easy....well then..HERE YOU GO.

Shrimp Feta Delight
1 pound of raw deveined and tail off shrimp
1 cup of feta, sundried tomato and pesto mixture
(find this at your local trader joes or farmers market)
4 large tomatoes
1 cup of mini heirloom tomatoes
3 lemons
2 T minced Garlic
3 T Olive Oil
Salt and PEPA
(not the 80's rap group)
1 pkg. of wheat angel hair
2 T parsley (fresh or dried is ok)
shaved parmesean cheese


 Preheat oven to 400 degrees and in a baking dish toss oil, salt and pepa, and tomatoes(cut in 4's and roast for 20 min.
 Remove from oven and mix...
 Add the garlic, shrimp, parsley, feta mix, and lemons (cut lemons in 4's and sqeeze juice over shrimp..and leave the rinds in the dish while baking)...Return to oven and bake for an additional 15 mon.
 While the shrimp is baking prepare the noodles...
 Pull this goodness out of the oven and let sit for couple minutes...
Serve this AMAZING mixture over a bed of angel hair and crusty bread on the side, parmesean on top..and yes..dive in...scream..and do the jig.
